RECIPE: Naked Chicken Burrito

We love making all sorts of burritos–they’re tasty, fresh and most of all fun! Although there is quite a lot of components to a dish like this, it will be worth it when you dig in. I actually started making these when I moved to Ireland and realized my favorite burrito chain was nowhere to be found. I finally gave in to my cravings, created it myself and have never looked back! It’s great to be able to control your own flavors, ingredients, and spiciness. As a side note, this recipe works perfectly in a tortilla or served with tortilla chips (crumbled on top or dipped right in) but to keep it a bit healthier and less stodgy, I like mine naked!

Cooking time: 30 minutes
 
Salsa Ingredients:
  • 3 large tomatoes, chopped
  • ½ onion, finely chopped
  • 1 jalapeno or about 5 slices of canned jalapenos, finely chopped (more or less for desired spiciness)
  • ¼ c fresh coriander/cilantro, chopped
  • juice from ½ lime
  • salt
Shredded Chicken Ingredients:
  • 450 g/1 lb cooked and shredded chicken, preferably leftovers
  • 3 tomatoes, roughly chopped
  • ¼ onion, roughly chopped
  • 2 cloves of garlic, minced
  • ½ tsp salt
  • ¼ bell pepper, roughly chopped
  • ½ jalapeno or about 3 slices of canned jalapenos (more or less for desired spiciness)
  • juice from ¼ lime
  • ¼ c fresh coriander/cilantro
  • ½ tbl butter
seasoning mix
  • ½ tsp paprika
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp mild chili powder
  • ¼ tsp cayenne powder
  • ½ tsp onion powder
Other Ingredients:
  • 200 g rice
  • juice from ¼ lime
  • 1 tbl vegetable oil
  • 400 g black beans
  • 1 bell pepper, seeded and sliced
  • 1 red onion, sliced
  • lettuce, shredded
  • handful of fresh coriander/cilantro, chopped
Method:
 
  1. First, make the salsa by throwing everything together in a bowl and setting aside. Easy. I like to leave mine chunky but you can blitz half of it or all of it using a stick blender or food processor to get a different texture.
  2. Now, get the chicken going. In a saucepan over medium high heat, combine the tomatoes, onion, 1 clove of garlic, and salt and bring to a boil. Let this stew until the tomatoes have broken down, about 15 minutes, then remove from the heat.
  3. In a food processor, add the bell pepper, jalapeno, garlic, lime juice, and coriander to the tomato mixture and blend until smooth.
  4. Melt the butter in the saucepan over medium low heat. Return the tomato mixture to the pan and add the seasoning mix along with plenty of salt and pepper.
  5. Lastly, mix in the shredded chicken and allow the flavors to mingle while it heats through.
“In the Meantime” Method:
  1. Cook the rice in the microwave. Once cooked, stir in the lime juice, oil, and about 2 tablespoons of chopped coriander.
  2. Heat the beans in the microwave. I like to leave them in their juices and then serve with a slotted spoon.
  3. Gently saute the bell pepper and onion until cooked through but still with a bite.
  4. Finally, serve everything–salsa, chicken, rice, beans, pepper and onion, lettuce, and coriander–in it’s own bowl and let your hungry guests build their own naked burrito!
Variation:
I actually almost always make mine vegetarian, just omit the chicken and cook the bell peppers and onion with the seasoning mix. Then, add some awesome homemade guacamole and/or a dollop of sour cream. Also, the leftovers from these make amazing breakfast burritos, just add a scrambled egg–so good!
